Cooking Wild Rice (Zizania)

The wild rice to water ratio for cooking is 1:3, similar to oryza rices. However, it requires 45-60 minutes of cooking time (as in brown rice) and results in a chewy texture. It is often mixed with brown rice to improve the texture (22). The grain that some argue is true wild rice - hand harvested grain from natural stands, may require only half the cooking time of cultivated wild rice (15-30 minutes) (2, 6), which may raise the question if they are different species.
