Wild Rice (Zizania) Anatomy

Zizanias are very vigorous plants. They are grasses of various heights, with hollow spongy stems, long flat monocot leaves, and a large branching panicle that is often the only part above the water, with female flower at the top and male flowers below (7, 11, 12, 13, 17, 21, 22).

  1. Z. palustris is the large seeded wild rice commonly found in grocery stores (11). Heights of cultivated stands reach 5-6 feet, are anchored by a shallow root system and generally sport 3-6 tillers topped with 16 inch panicles bearing grains .3-.8 inches long (7, 11, 12, 13, 21). Non-cultivated plants may bear up to 50 tillers (13). Mature seeds turn purplish-black.
  2. Z. aquatica's yellow to reddish seeds are more slender than those of Z. palustris, and are not harvested for food (11), although the grains are edible (17).
  3. Z. texana has slender black or brown seeds and long green leaves up to 4 feet long and 1 inch wide (15).
  4. Z. latifolia plants grow from 3-7 feet in height and have leaves 1-2 feet long (24). According to the Waikato Regional Council (20), Z. latifolia is an invasive plant in New Zealand and can achieve heights of 12 feet.
